Vegan Samosas are crispy pastries filled with spiced potatoes and peas, offering a savory and aromatic flavor. This plant-based version of the traditional Indian snack is completely dairy-free and can be baked or fried. Paired with chutneys, they make a perfect appetizer or snack.

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • ¼ cup vegetable oil or melted coconut oil
  • ½ tsp salt
  • ½ cup water (add gradually, as needed)

For the Filling:

  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 medium onion (finely chopped)
  • 2-3 garlic cloves (minced)
  • 1-inch ginger (minced)
  • 2 green chilies (finely chopped; optional, adjust to taste)
  • 3-4 medium potatoes (boiled, peeled, and roughly mashed)
  • 1 cup green peas (fresh or frozen)
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (optional)
  • Salt to taste
  • Fresh cilantro (chopped, for garnish)

Execution

1. Make the Dough:

  1. In a mixing bowl, combine flour and salt.
  2. Add oil and mix until the mixture is crumbly.
  3. Gradually add water, kneading until it forms a firm, smooth dough.
  4. Cover and let it rest for 20-30 minutes.

2. Prepare the Filling:

  1. Heat oil in a skillet. Add cumin seeds, and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic, ginger, and green chilies. Sauté for a minute.
  4. Add mashed potatoes and green peas.
  5. Season with ground coriander, cumin, garam masala, turmeric, red chili powder, and salt.
  6. Mix well, cook for 2-3 minutes, then add chopped cilantro.
  7. Let the filling cool.

3. Assemble the Samosas:

  1. Divide the dough into 8-10 balls.
  2. Roll each ball into a thin oval, about 6 inches long. Cut in half to form two semi-circles.
  3. Form a cone with each semi-circle, sealing the edge with water.
  4. Fill the cone with the potato filling, then seal the open end with a bit of water.

4. Fry the Samosas:

  1. Heat oil in a deep frying pan over medium heat.
  2. Fry the samosas in batches until golden and crispy.
  3. Drain on paper towels and serve hot with chutney.

Additional tips

  • Baking option: Brush with oil and bake at 375°F (190°C) for 25-30 minutes until golden brown.
  • Serve with vegan mint chutney or tamarind sauce for extra flavor!
