Vegan Samosas are crispy pastries filled with spiced potatoes and peas, offering a savory and aromatic flavor. This plant-based version of the traditional Indian snack is completely dairy-free and can be baked or fried. Paired with chutneys, they make a perfect appetizer or snack.
Ingredients
For the Dough:
- 2 cups all-purpose flour
- ¼ cup vegetable oil or melted coconut oil
- ½ tsp salt
- ½ cup water (add gradually, as needed)

- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 medium onion (finely chopped)
- 2-3 garlic cloves (minced)
- 1-inch ginger (minced)
- 2 green chilies (finely chopped; optional, adjust to taste)
- 3-4 medium potatoes (boiled, peeled, and roughly mashed)
- 1 cup green peas (fresh or frozen)
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- ½ tsp turmeric powder
- ½ tsp red chili powder (optional)
- Salt to taste
- Fresh cilantro (chopped, for garnish)
Execution
1. Make the Dough:
- In a mixing bowl, combine flour and salt.
- Add oil and mix until the mixture is crumbly.
- Gradually add water, kneading until it forms a firm, smooth dough.
- Cover and let it rest for 20-30 minutes.
2. Prepare the Filling:
- Heat oil in a skillet. Add cumin seeds, and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Stir in garlic, ginger, and green chilies. Sauté for a minute.
- Add mashed potatoes and green peas.
- Season with ground coriander, cumin, garam masala, turmeric, red chili powder, and salt.
- Mix well, cook for 2-3 minutes, then add chopped cilantro.
- Let the filling cool.
3. Assemble the Samosas:
- Divide the dough into 8-10 balls.
- Roll each ball into a thin oval, about 6 inches long. Cut in half to form two semi-circles.
- Form a cone with each semi-circle, sealing the edge with water.
- Fill the cone with the potato filling, then seal the open end with a bit of water.
4. Fry the Samosas:
- Heat oil in a deep frying pan over medium heat.
- Fry the samosas in batches until golden and crispy.
- Drain on paper towels and serve hot with chutney.

- Baking option: Brush with oil and bake at 375°F (190°C) for 25-30 minutes until golden brown.
